Lemon Vanilla Cupcakes with 1:1 Gummies

The only way the perfectly dosed, delightful little sugar-coated raspberry 1:1 Gummies from Care By Design could get any better is if eating them could take a little longer, so placing one atop a fluffy bed of lemony cupcake and sweet vanilla frosting helps prolong the eating and enjoying of it in just the right way. Celebratory and delicious, these mini-cupcakes are taken to the next level when topped with a 1:1 Cannabis-infused Raspberry Gummies (containing the perfect dose of 5mg of CBD and 5mg of THC). Wonderful on their own and well worth crowning a delectable mini-confection, these gummies are a tasty and effective, perfectly balanced THC to CBD treat.

You will need:

  • Mini-cupcake tin (lightly greased and floured) or mini-cupcake liners
  • Zester
  • Large mixing bowl Hand Mixer/Beater
  • Whisk
  • Scoop (to evenly portion out batter)
  • Piping bag (plastic bag with one corner’s tip cut off works perfectly)
  • Piping Tip (optional, if you have one handy, the plastic bag alone can work)
  • 16 Care By Design 1:1 Ratio Cannabis-Infused Raspberry Gummies (for topping)

Lemon Cupcakes:

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 3/4 cup soy milk
  • 2 tsp lemon extract
  • Zest of 1 lemon
  • 1 flax egg (1 tbsp flaxmeal mixed with 2 tbsp water, allowed to sit and absorb for 5 mins.)
  • 1/4 cup vegetable oil

Vanilla Icing:

  • 1/4 cup buttery spread
  • 2 1/4 cup powdered sugar
  • 2 tbsp soy milk
  • 1 tsp vanilla extract

Makes: 16 mini cupcakes, with one 1:1 Cannabis-infused Raspberry Gummy per cupcake, containing 5mg of THC and 5mg of CBD per gummy

Preheat oven to 350ºF. In the mixing bowl, combine the flour, baking powder, and the salt. Stir in the sugar, soy milk, lemon extract, lemon zest, oil, and flax egg and mix together until just mixed. Pour into mini-cupcake liners or the prepared cupcake tins and bake for 15-20 minutes. Cool fully before icing.

To prepare icing: In a mixing bowl, beat together the buttery spread with one cup of powdered sugar. Add the remaining sugar slowly, alternating with the tbsp.’s of soy milk and the vanilla extract, until smooth and spreadable.

After icing, top each cupcake with a 1:1 Cannabis-Infused Raspberry Gummy and enjoy!
