Traditionally a little bit of this and that, and depending on who you talk to, the name “Buddha Bowl” is either a reference to Buddha receiving small donations of food in his bowl from people along his journey, or as a result of typically being served in a large, round dish resembling Buddha’s belly.
Either way, this colorful and vibrant mishmash is full of vegetables, grains, healthy greens and protein, plus serves as an adaptable meal idea that can make the most of whatever you’ve got on hand. The basic Buddha bowl starts with a cooked grain base, such as quinoa, rice, millet, fresh, buckwheat, couscous, or barley (stuffing could be AMAZING), about a cup’s worth.
Then add some greens- sautéed spinach, steamed kale, chopped parsley or cilantro, splashed with oil or lemon juice, aiming for about two cups of greens after being cooked/prepared (you really can’t add too many greens here, in my opinion, go nuts!). Then add at least one cup (or more!) of vegetables, like roasted cauliflower, broccoli, Brussels sprouts, bell peppers, asparagus, or whatever is most in season. Add to that two-thirds of a cup of a protein, like crispy tofu, tempeh, black beans, edamame, or pan-roasted chickpeas. Add texture with a handful of shredded carrots, thinly sliced beets, micro greens, cucumber, almonds, bean sprouts, peanuts or roasted sunflower seeds- anything that adds crunch and texture. Top with a sauce like spicy peanut sauce or tahini sauce, and one dropper full of Care By Design 40:1 Full Spectrum CBD drops.
You can get really creative in adding notes of sweetness or spice, like sprinkling dried cranberries or fresh pineapple or garlic-chili oil as a finishing touch. Can be enjoyed immediately, or prepared ahead and refrigerated for 3-5 days (depending on exact ingredients used).
